Pineapple Upside Down Cake

This delightful cake is quite easy to make and uses no eggs. It is made in the microwave oven. It is colorful, flavorful and delicious.

Ingredients

  • 1 cup Butter 2 sticks
  • ½ cup Brown Sugar
  • 1 can Pineapple Slices
  • 4 Maraschino or Candied Cherries
  • cup All-purpose Flour
  • ¾ Sugar cane sugar
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • ½ cup Juice from the canned pinapples plus Milk
  • 1 tsp Vanilla Extract

Instructions

  1. Melt the butter, but don't burn it.

  2. In an 8 inch round or square glass dish, add 1/4 cup melted butter. Sprinkle the brown sugar over the butter.
  3. Drain the pineapple slices (save the liquid). Place the slices on a paper towel to dry.
  4. Arrange the pineapple slices in the 8 inch glass dish. Decorate with cherries.
  5. In a small bowl, place flour, cane sugar, baking powder, salt, rest of the melted butter, juice plus milk liquid, and vanilla.

  6. Using a hand blender or a large spoon or fork, blend the ingredients for a minute or so, or until well-blended.

  7. Carefully spread the batter over the fruit in the dish. You can add blobs of batter on top, and gently smooth it over the fruit.
  8. Place the dish in the Microwave oven.

  9. Microwave at High, 6 to 12 minutes, depending upon your microwave oven. If necessary to manually rotate it, do so every 2 minutes.

  10. Test with a tooth pick. When done, toothpick stuck in the cake will come out clean.
  11. Invert the cake onto a plate. Let the dish stand over the cake for a few minutes.
  12. Carefully remove dish. Serve the cake hot or warm.
