Easy Celery Rice is really an easy recipe for a simple but tasty, nutritious dish. Even the laziest person cannot give an excuse! It can be made mild for kids. It can be used for Lunch or Dinner. Really easy to make and delicious.
Cook the Rice. Use this Recipe.
Add celery pieces, ½ teaspoon salt and the spices. (Celery does not absorb salt. Add more salt to taste after the cooked rice has been mixed with the vegetables.)
Add ⅛ cup water to the pan. Cover and cook for 3 minutes.
If contents look dry, add ⅛ cup of water.
Stir, and cook for 3 more minutes, or until celery is cooked but firm. Do not overcook.
Add the cooked rice to the pan. Add 1 tsp salt.
Stir the contents gently and mix thoroughly. Do not mash the rice, unless you like the dish mushy.
Add the cilantro. Mix well.
