Mung Dahl is very healthy, high on protein, low on calories, no fat. This cooked, mashed dahl can be used with vegetables or with just tomatoes or plain, as a stew - with or without spices.
I use a pressure cooker to cook mung dahl. But you can use either procedure according the the equipment you have.
Follow this procedure when you are ready to make the dish using the mashed mung dahl.
Wash the Mung Dahl. Place it, preferably in a non-stick, sauce pan.
Add 3 cups of water. Cook for 15 to 20 minutes, stirring every 2 or 3 minutes.
If the dahl is not cooked and there is no water, add 1/2 or 1 cup of water, depending upon how much the dahl has cooked. Repeat this, if necessary.
If the dahl appears soft and cooked, take a teaspoon or tablespoon of dahl and try to mash it on a plate or cup. If you can mash it easily, remove the saucepan from the stove.
Using a ladle, mash the dahl lightly all around, until the dahl appeared mashed.
Place the pressure cooker on the stove on high heat. Place the metal plate that is provided with the cooker at the bottom of the pressure cooker.
Place 1/2 to 3/4 inch of water at the bottom of the cooker.
In a small deep metal bowl that can hold about 4 cups of water, add the washed mung dahl.
Place the bowl inside the pressure cooker on the plate.
Add 2 cups of water (for 1 cup of dry mung dahl) into the bowl.
Close the pressure cooker. Make sure the settings are set correctly to cook. Turn on the stove.
When enough pressure has built up, in about 10 minutes, the noise of the steam will slowly increase and become very loud. Leave it this way for 1 minute. Then switch off the stove.
Wait for about 15 minutes for the steam to completely subside in the pressure cooker. When it is very safe to open, open the pressure cooker.
Remove the bowl from the pressure cooker using mittens.
Using a ladle, mash the dahl lightly all around, until the dahl appeared mashed.
Continue with your recipe that uses the cooked Mung Dahl.
You can use the cooked mashed mung dahl to make a vegetable dish, or with just tomatoes, or just plain - with or without spices. When you make the dishes with the mung dahl, you can add salt and spices as you like.
