This is a very easy recipe. But the pie is simply delicious, and healthy too. Try it and you will agree with me.
Bake the pie shell according to package directions.
Thaw the frozen berries and peaches until they are at room temperature.
Slice some of the fresh strawberries into thin slices for garnish. Set it aside.
Place a non-stick sauce pan on low heat. Add the butter.
When the butter is melted, add the thawed berries, peaches, vanilla extract and the flour. Mix well. Cook the contents for about 5 minutes. Keep stirring often.
Cook until the berries and peaches look soft, and the mixture is thickened and not runny.
Add the sugar or sugar substitute. Mix well and cook for 2 more minutes. Remove the pan from the heat and set it aside to cool.
Place the baked pie shell on the counter top or table. Gently pour the berry/peach mixture in the middle of the pie shell. If there is extra mixture, you can store it in the refrigerator for later use. Spread the mixture so that it covers the space in the pie shell. See pictures.
Garnish with the sliced fresh strawberries all around the pie.
Serve a slice either by itself or topped with whipped cream.
You can heat up a slice in the microwave oven on high for about 15 seconds.
