This is a creamy dessert that is absolutely refreshing and healthy. Beautiful and pleasing too. Simple and easy to make.
If canned, rain the apricots. Place drained apricots or fresh apricots in a blender or food processor. Blend until smooth.
In a large bowl, combine apricot purée, vanilla yoghurt and sugar (or sugar substitute). Mix thoroughly.
Cover and chill for at least 30 minutes.
To serve, first spoon a few blueberries into tall glasses, wine glasses or dessert dishes.
Then spoon the apricot smoothie over the blueberries.
Next, spoon some of the sliced strawberries.
After that, spoon the apricot smoothie over the strawberries.
Top each each glass with a couple of strawberry slices and garnish with a mint leaf.
Serve cold.
