Angel Hair Pasta with Spinach & Sun-Dried Tomatoes

This dish is delicious and quite healthy. It is combination of Pasta and Veggies which makes it suitable for adults and kids. I am using a few simple spices here that can be adjusted as you like. This item can be used for Lunch, Dinner, or even for breakfast for some avid Italian food lovers!

Ingredients

  • ½ of 16 oz. package Angel Hair Pasta strands broken into two
  • 1 package Frozen Chopped Spinach about 4 cups
  • 4 oz Julienned Sun-Dried Tomatoes half of an 8 oz. jar
  • 1 Onion finely chopped
  • 1 Bell Pepper finely chopped, optional
  • 4 cloves Garlic finely chopped or diced, optional
  • 1 tsp Dried Basil
  • 1 tsp Oregano
  • 1 tsp Italian Spice Blend
  • ½ tsp Cayenne Pepper
  • ¼ tsp Ground Black Pepper
  • 2 tsp Salt
  • 4 tsp Olive Oil
  • 1 cup Grated Parmesan Cheese optional, skip if you are vegan

Instructions

  1. In a large container, on low heat, start heating about 3 to 4 quarts of water to cook Angel Hair Pasta.

  2. In a large non-stick frypan, on medium heat, add 2 tablespoons oil.

  3. Add onion, bell pepper, garlic and 1/2 teaspoon salt. With a flat spoon on spatula stir once in a while until veggies are cooked.

  4. Add the frozen chopped spinach to the pan.

  5. Add 1 tsp salt. Mix well.

  6. Add the spices. Mix well. Cook for 5 minutes, or until spinach is cooked.

  7. Take half of the sundried tomatoes from the 8 oz jar without the oil, as much as possible. If you prefer, drain the sun-dried tomatoes on a thick wad of paper towel.

  8. Add the sun-dried tomatoes to the cooked spinach in the frypan. Mix well and cook for 2 minutes. Lower the heat to simmer.

  9. In the meanwhile, break the Angel Hair Pasta strands into two, and add them to the boiling water in the large containter. Cook the pasta according to package directions (or 4 minutes). Drain in a collander and set aside.

  10. Transfer half of the cooked spinach mixture from the frypan to a large bowl (like the one shown in the picture). Set aside.

  11. Add half of the cooked angel hair pasta to the frypan on the stove. Using the pasta fork, lift the pasta and mix the contents a few times.

  12. Add the other half of the angel hair pasta to the spinach mixture in the large bowl. Mix the contents of the bowl with the pasta fork as specified above.

  13. Transfer the mixed contents of the large bowl to the frypan on top of the existing contents. There is no need to mix again, since the contents were mixed already.

  14. Serve hot, with sprinkled Parmesan cheese on the serving. Serve garlic bread or sourdough bread slices on the side.
