Ingredients

  • 4 large Zucchini Squash cut into 1 inch cubes
  • 1 tsp Cumin Seeds
  • 1 tsp Channa Dahl
  • 1 tsp Urad Dahl
  • ½ tsp Turmeric Powder
  • ½ - 1 tsp Cayenne Pepper
  • 4 tbsp Oil Olive oil, Avocado Oil, Other
  • 1 tsp Salt
  • 2 tbsp Cilantro finely chopped

Instructions

  1. Place non-stick fry pan on medium heat. Add oil.

  2. When oil is heated up, add cumin seeds, urad dahl and channa dahl. Stir fry with a flat non-stick spatula for a minute, or until the channa dahl and urad dahl are golden brown.

  3. Add the zucchini pieces. Add turmeric, one teaspoon salt and cayenne. Mix the contents and cook for 2 minutes covered.

  4. Uncover, stir the contents, and cook uncovered for 4 more minutes, stirring after 2 minutes.

  5. Using a toothpick and check a piece or two of the zucchini pieces. The zucchini must be cooked but quite firm. Do not overcook.

  6. If the zucchini is still rawish or uncooked, cook until it looks roasted but firm. Stir the contents every minute.

  7. If you like, you can add more salt or cayenne. Mix well after adding these.

  8. Add cilantro and stir the contents without mashing the zucchini.

  9. Serve hot.
