Linguine, or for that matter any kind of pasta, lends itself to myriads of interesting food recipes. I created this recipe in the Indian style. You can use Fettuccine instead of Linguine for this recipe.
RECIPE :
Linguine/Fettuccine Upma Indian Style
This is a Recipe using Pasta made in Indian Style.
Ingredients
- 1 package Linguine or Fettuccine, broken into 2 or 3 pieces
- 1 Bell Pepper finely chopped
- 1 Onion finely chopped
- 1 - 2 small green chillies serrano peppers, finely chopped, the amount of chillies depends on your taste
- 1/4 cup Cilantro fine chopped
- 4 tbsp Olive Oil
- 1 tsp Mustard Seeds
- 1 tsp Channa Dahl
- 1/2 tsp Hing also known as Asafoetida
- 1//2 tsp Turmeric
- 3 tsp Salt
- 2 tbsp Lemon Juice Cooking kind, add 1 tbsp first, then add more if you like
- 6 cup Water
Instructions

Linguine is usually cooked according to the package directions. But in this recipe, the sticks, so to speak, have to be broken into 2 or 3 parts to enhance the taste of the dish.

Cook Linguine according to package directions.

Heat oil in a deep frying pan. When hot, add mustards seeds and channa dahl.

When urad and channa dahl are golden brown, add chopped green chilli, onion, bell pepper and 1/2 tsp salt. Stir and cook for 2 minutes, or until vegetables are cooked but firm.

Add turmeric and hing. Stir for a minute.

Add the drained Linguine to the fry pan. Mix well. Add 1 tsp more salt and the lemon juice. Add the cilantro too. Mix thoroughly.

If needed, add more salt and mix well.

Serve hot.
Recipe Notes
This dish tastes great when served hot, but it will be quite tasty lukewarm or even cold.
Serving Suggestions on the side :
1) Serve yoghurt or cottage cheese (if not Vegan).
2) Serve Raita - Yoghurt typically mixed with grated or chopped cucumber and or tomatoes (if not Vegan)
3) Serve Indian pickles.
4) Serve Fruit.
