Easy Delicious Veggie Sandwich

A Sandwich recipe may not sound very exciting. However, when we get involved in other new or attractive dishes, we may forget the Old Reliable, which can be very tasty and definitely healthy. It is immensely helpful as a light lunch too. And this recipe has a couple of ingredients that add a little twist to a monotonous, well-known sandwich. The truth is, when all other things fail, the good old Sandwich comes to the rescue.

Easy Delicious Veggie Sandwich

Serves 1
Cook time 5 minutes

  • 2 Slices Sourdough Bread (or wheat, rye etc.)
  • 2 Slices Cheese (provolone, mozzarella, cheddar, spicy jack, swiss, havarti)
  • 1 thin slice Red Onion
  • 1 leaf Leaf Lettuce (or romaine, iceberg etc.)
  • 1 Tomato (thinly sliced)
  • 8 thin slices Cucumber (peeled. If thin skin, need not be peeled.)
  • 2 Slices Pickles (marinated cucumber slices, sold in grocery stores)
  • 2 long tooth picks


  • 1 teaspoon Vegan Mayonnaise (or margarine)
  • 1 teaspoon Deli Dressing (containing basil, olive oil etc.)
  • Sliced Marinated Jalapenos (sold in grocery stores, tamed or hot)
  • 1/2 teaspoon Crushed Red Peppers


Step 1

If the bread slices were refrigerated, toast them slightly. Don't toast too much. If the bread slices are fresh, you don't have to toast them, or you can still toast them a little.

Step 2

Spread a thin layer of margarine or vegan mayonnaise on the bread slices.

On one of the bread slices, do the following.

Arrange the tomato slices. Arrange the cucumber slices evenly on top. Place the rings of the red onion evenly on top.

Step 5

Place the jalapeno pieces evenly. Place one slice of pickle on either side of the bread slice. Place the cheese slices on top side by side.

Step 6

Shake the deli dressing well, and immediately and quickly sprinkle a little on top. Otherwise, you will only get the oil and not the basil or other spices.

Step 7
Sprinkle crushed pepper, if you like it really hot. Top with lettuce.
Step 8
Place the other bread slice on top.

Have 2 toothpicks ready. Holding the sandwich lightly, cut the sandwich in two, right in the middle. Place the toothpicks to hold the sandwich halves in place.

Step 10

Serve with a refreshing cold drink.

Step 11
Serve the sandwich with a side of potato chips, if you like.
