A delicious and healthy salad that is very easy to make. It will come in handy as a snack in between meals too. It is mild, yet has a little pep to it because of its tanginess and a little spice. It can be sweet and sour too for those who like special tastes.

Ingredients

  • 1 cup Lentils
  • 1 - 2 Tomotoes (Finely chopped)
  • 1/8 - 1/4 cup Lemon Juice
  • 2 tablespoons Olive Oil
  • 3/4 cups Green Onions (scallions, finely chopped)
  • 1/4 - 1/2 teaspoon Ground Black Pepper (fresh ground)
  • 2 teaspoons Salt
  • 6 - 8 Onion Rings (fresh, thinly slices)

Optional

  • 1/2 cup Raisions

Directions

Step 1
Rinse the lentils. Place in a large sauce pan or pot. Add 2 cups of water and 1 teaspoon salt. Bring it to a boil. Reduce heat, cover and simmer for about 20 minutes, or until lentils are tender. Add a little more water, if necessary.
Step 2
Drain the lentils well. Place them in a serving bowl. Add 1/2 teaspoon salt, lemon juice, oil, tomatoes, ground pepper, scallions and raisins. Stir and mix well.
Step 3
If you like the salad cool, refrigerate for about an hour and remove.
Step 4
Garnish with the sliced onion rings.
Step 5
Serve at room temperature or cold.
