Tasty Enchiladas with a Twist

Enchiladas can be made in many different ways. It can be a simple layer of corn tortillas rolled with refried beans and grated cheese and topped with a few teaspoons of sauce on top of each. Or they can be like they are in this recipe with a whole lot of layers and ingredients. It all depends on your mood, food items you like and how much time you have. I love them any which way they are made as long as they are vegetarian!

Tasty Enchiladas with a Twist

Ingredients

  • 10 Small Corn Tortillas
  • 2 cups Enchilada Sauce
  • 1 - 2 teaspoon Mexican Chili Powder
  • 1 can Black Beans (8 oz can)
  • 1 cup Sliced Black Olives
  • 1 can Mexican Green Chilies (4 oz can)
  • 2 - 3 cups Mexican Cheese (Grated)
  • 1 can Refried Beans (8 oz can)
  • 1/2 cup Cilantro (finely chopped)
  • 1 teaspoon Salt

Optional

  • 1 Avocado

Directions

Step 1
Heat up the enchilada sauce. Add the chili powder. Mix. Keep it warm.
Step 2
Heat up the refried beans in a bowl in the microwave oven. Use a microwaveable lid or a paper towel to cover the refried beans while being heated in the microwave oven.
Step 3
Peel the avocado, remove the seed and mash it using a mortar and pestle or using a heavy spoon and a bowl. Add 1/2 teaspoon salt and mix.
Step 4
Have a microwaveable casserole ready to place the enchiladas. Place a small frying pan on low heat.
Step 5
Warm up a corn tortilla on both sides. Place it on a plate. Place a tablespoon of refried beans, a tablespoon of grated cheese, a tablespoon of enchilada sauce on one end of the tortilla. Roll it up. Place it in the casserole at one end.
Step 6
Repeat Step 5 for all the corn tortillas, adding the new enchilada very close to the previous one on the casserole.
Step 7
Spread the black beans evenly on the enchiladas.
Step 8
Spread the sliced olives, green chillies and cilantro evenly on all the enchiladas.
Step 9
Pour the rest of the enchilada sauce on top and spread evenly.
Step 10
Place spoonfuls of mashed avocado on the enchiladas . You can leave them as clumps or spread evenly.
Step 11
Spread the rest of the grated cheese on the enchiladas.
Step 12
Place the casserole in the microwave oven and heat for 3 to 5 minutes, or until the cheese is melted.
Step 13
Serve hot with a tortilla chips or a salad such as the lettuce/sour cream salad (Recipe available on this site). If you don't use mashed avocado in the casserole, you can serve Guacomole as a side dish.
