Tostadas may appear difficult to prepare. Not this recipe. Try it! It is easy to make, if you have all the ingredients. It tastes great and you and your family will love it!
4 Corn Tostada Shells (Should be Firm, not brittle or fragile. Should not crumble or break when taken in your hands.)
1 can Refried Beans (Vegetarian, Or non-fat plain or regular that does not contain lard.)
1/2 cup Tomato Salsa (Mild, Medium or Hot)
1/2 cup Black Olives (Sliced)
1/2 cup Cilantro (finely chopped)
1 cup Tomatoes (Large - 1 or Small - 2, finely chopped)
1 cup Cheese (Grated, Mexican Mix)
Serving Suggestions: 1) Serve Tostadas with Sour Cream and Guacamole on the side.
Note: 1) You can increase or decrease the toppings as you like.
Use a toaster oven in Toast setting. Place the tostada shells on the toaster oven rack, twp at a time, and toast just for 20 seconds, until the shells are warm. Do NOT toast too much. Do NOT burn the shells.
Remove the tostada shells and cool them for a minute.
Heat up the refried beans (covered) in the microwave oven for 1 minute on High.
Take a tostada shell, place it on a plate.
Add 1/8 cup (roughly 2 or 3 tablespoons) of refried beans, and spread it on the tostada.
Spread 2 tablespoons of salsa on top.
Place 2 tablespoons each - chopped tomatoes, sliced olives and chopped cilantro.
Top all of this with 1/8 to 1/4 cup of grated cheese.
Place the tostada on a clean plate. Microwave on High for 30 seconds or until the cheese is barely melted.
Remove the tostada carefully and place it on a large platter.
Repeat step 4 through 10 for the other 3 tostada shells.
Serve Hot or Warm. You can reheat the tostadas for 15 seconds on High, if necessary.
