Ingredients
- 2 Bell Peppers (large, both about same size)
- 2 cups Frozen Peas (or fresh peas)
- 1 cup Edamame (shelled)
- 2 Tomatoes (finely chopped)
- 2 Onion (finely chopped)
- 1 cup Artichokes Hearts (canned, cut into small pieces)
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Ground Black Pepper
- 1 cup Grated Parmesan Cheese
- 1 cup Grated Mozarella Cheese
- 4 tablespoons Olive Oil
Note
Serving Suggestions:
1) Serve hot with fresh or toasted bread.
2) You can serve the bell peppers on a bed of rice as well.
Options:
1) Reduce or increase the cayenne and ground black pepper as you like.
2) If you are Vegan, skip the cheeses.
