Wonderful Healthy Stuffed Bell Pepper

This recipe shows that you can have a tasty item that can also be healthy.  This dish is beautiful to present, the flavor is great and it is delicious to the taste. On top of it all, it is healthy. If you are Vegan, no worries, this dish will taste just as great without the cheeses!

Wondeful Stuffed Bell Pepper Halves

Wonderful Healthy Stuffed Bell Pepper

Serves 2 - 4

Ingredients

  • 2 Bell Peppers (large, both about same size)
  • 2 cups Frozen Peas (or fresh peas)
  • 1 cup Edamame (shelled)
  • 2 Tomatoes (finely chopped)
  • 2 Onion (finely chopped)
  • 1 cup Artichokes Hearts (canned, cut into small pieces)
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Ground Black Pepper
  • 1 cup Grated Parmesan Cheese
  • 1 cup Grated Mozarella Cheese
  • 4 tablespoons Olive Oil

Note

Serving Suggestions:
1) Serve hot with fresh or toasted bread.
2) You can serve the bell peppers on a bed of rice as well.

Options:
1) Reduce or increase the cayenne and ground black pepper as you like.
2) If you are Vegan, skip the cheeses.

Directions

Step 1
Place medium non-stick fry pan on medium heat.
Step 2

Add oil and onions. Add 1/2 teaspoon salt. Stir fry until onions are cooked.

Step 3

Add frozen peas. Add 1/2 teaspoon salt. Stir fry until peas are cooked but still firm. It is better that they are half-cooked than over-cooked.
Note: If using fresh peas, boil them separately, drain, add it to the pan instead of the frozen peas, and stir fry for a minute.

Step 4
Add the canned/cooked edamame to the mix. Stir fry for 1 minute.
Step 5

Add the spices and tomatoes. Add half a teaspoon salt. Stir fry for 1 minute.

Step 6
Add the artichoke hearts. Stir fry for 1 minute.
Step 7
Reduce the heat to very low or simmer. Keep stirring once in a while.
Step 8
Trip the bell pepper stems. Cut each bell pepper into two, in the middle. Remove seeds.
Step 9

Add a cup of water to a wok. Place on medium heat. When the hot is hot and starts steaming, place the bell peppers halves face up. Cover and steam for 1 minute.

Step 10

Using a spatula, carefully turn over the bell pepper halves, without breaking them or damaging them. Cover and steam for 1 minute.

Step 11

Repeat steps 9 and 10 one more time, or until bell pepper halves look half-cooked but still firm.

Step 12
Using the spatula, carefully remove the bell pepper halves and place them in a microwaveable casserole or square dish.
Step 13
Sprinkle a little salt on the bell pepper halves. Place a few tablespoons of the cooked vegetable mix on each of the half.
Step 14
Spoon the remaining stir-fried veggie mix on to the sides of the casserole dish.
Step 15
If you like, top the bell pepper halves with grated mozzarella cheese. Place in the microwave oven for 2 minutes on High, or until mozzarella cheese is melted.
Step 16
Sprinkle grated parmesan cheese on top of that.

Serve hot with slices of bread or a bed of hot cooked rice.
