Rice Pasta Veggie Mélange

Typically for a Pasta Recipe, we will find Sphagetti, Macaroni, Linguine etc. is used. But using Rice Pasta is rare. I tried it and it came out pretty good. The pasta was clinging almost like gnocchi but it was a refreshing variation to the usual pasta and I liked it. So I am sharing it with you.

Ingredients

  • 2 cups Rice Pasta
  • 1 Onion (finely chopped)
  • 4 - 6 cloves Garlic (finely chopped)
  • 1 Bell Pepper (coarsely chopped)
  • 2 - 4 Roma Tomatoes (coarsely chopped)
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Dry Basil
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 4 tablespoons Oil
  • 1/2 cup Fresh Parmesan Cheese (grated)

Optional

  • 1 teaspoon Crushed Dry Rosemary

Directions

Step 1
Prepare Rice Pasta as per package directions, with a teaspoon each of salt and oil.
Step 2
In the meanwhile, place a medium non-stick pan on medium heat. Add oil to the pan.
Step 3
When oil is hot, add the chopped onion. Add the garlic. Stir fry with a spatula until onion and garlic are cooked.
Step 4
Add the bell pepper and the spices. Add 1/2 teaspoon salt. Mix the contents. Cook until bell peppers are cooked but firm.
Step 5
Add the tomatoes and 1/2 teaspoon salt. Stir fry the tomatoes without breaking or mashing them until tomatoes are a little roasted but still firm. Turn off the stove, if the pasta is not ready.
Step 6
Drain the pasta. On medium heat, add the cooked rice pasta to the pan.
Step 7
Mix the contents of the pan thoroughly.

Place a serving of the pasta mixture on a plate. On each serving on the plate, place a few tablespoons of parmesan cheese.
Step 9
Place the plate in the microwave oven and heat it on high for 30 seconds to a minute, or until the parmesan cheese is slightly melted. Serve hot immediately.
