Pasta with Artichoke Hearts and Sun-dried Tomatoes

Ingredients

  • 2 cups Penne or Rotini Pasta
  • 1 cup Sun-dried Tomatoes (or Oven-dried tomatoes) (chopped)
  • 2 cups Artichoke Hearts (canned) (cut into 1 inch pieces)
  • 4 Stalks Celery (chopped into 1 inch pieces)
  • 1 Onion (finely chopped)
  • 6 cloves Garlic (finely chopped)
  • 4 tablespoons Olive oil
  • 1 teaspoon Oregano
  • 1/2 teaspoon Cayenne Pepper
  • 1 teaspoon Italian Blend Spice
  • 1/2 teaspoon Ground Black Pepper
  • 1 teaspoon Salt
  • 1 cup Water
  • 1 Sprig Parsley (for garnish)

Note

Serving Suggestions:
1) Serve hot by itself or with side dishes. 
Options:
1) I use Sun-Dried tomatoes already julienned and soaked in oil.  This kind is soft.  But if you have the dry and hard ones, just soak the pieces in warm water until they get soft.  The same with Oven-Dried tomatoes too.  If you use the kind soaked in oil, reduce the fresh oil initially by a tablespoon or two, if you like.

Directions

Step 1
Cook Pasta according to Package directions.
Step 2
In the meanwhile, heat oil on medium heat in a deep fry pan or wide sauce pan.
Step 3
Add onion and cook for 5 minutes. Stir with a flat spatula.
Step 4
Add celery, garlic and salt. Cook for 5 minutes or until celery is cooked but firm.
Step 5
Add oven-dried tomatoes and spices. Cook for 5 minutes.
Step 6
Add artichoke hearts. Carefully turn and mix the contents without breaking or mashing the artichoke hearts.
Step 7
Add the cooked pasta and one tablespoon olive oil to the contents in the fry pan. Mix well. Garnish with the parsley sprig.
Step 8
Serve hot with a side of salad and/or toasted, buttered sourdough bread slices. See my Recipe for these.
