Options: 1) If you don't have or don't like bell peppers, you can use cut broccoli or just onion and garlic. 2) You can increase salt and spices as you like. 3) If your microwave oven is not big enough to contain the microwaveable casserole dish, pre-heat your conventional oven to 350 degrees, layer the lasagna items in a casserole dish that can be used in the oven and bake for 10 to 20 minutes, or until mozarella cheese is melted at the top. Keep watching the casserole every 5 minutes.
Place a frying pan on medium heat. Add oil.
When oil is heated up, add the onion, bell peppers and garlic together. Add 1/2 teaspoon salt. Stir fry and cook for 5 minutes, or until vegetables are cooked.
Add tomato sauce, 1/2 teaspoon salt and spices. Cook for 5 minutes.
Cook lasagna according to package directions. Do not overcook.
Mix cottage cheese or ricotta cheese with the parmesan cheese in a bowl.
The microwaveable casserole dish must be long and wide enough to hold three full length lasagna pieces side by side. (See Recipe Note). Spoon some of the sauce you prepared at the bottom of the casserole evenly.
Place three pieces of lasagna full length in the casserole. Spoon some of the sauce at the top of the lasagna pieces. Then spread a layer of ricotta cheese/cottage cheese mixture evenly on top. Then a layer of grated mozzarella cheese evenly.
Perform Step 7 two more times so that all the nine lasagna pieces have been used.
Place the casserole dish in the microwave oven. Cook at High Heat for about 3 to 5 minutes, or until the mozzarella cheese at the top is melted or sizzling.
Remove casserole from the microwave oven. Serve hot.
