Tindora or Kovaikkai Curry is probably one of the easiest recipes that I have come up with. Except for the difficulty of obtaining these vegetables, the rest is easy. So easy to make, very healthy, so tasty, so colorful, and just a little salt and oil is all that you really need. So it is a shame if this dish is not made at least once.

Ingredients
- 30 - 40 Tindora's (Vegetable available in Indian Grocery Stores)
- 1 teaspoon Salt (Life giving commodity)
- 1 teaspoon Mustard Seeds (Adds great flavor to the dish.)
- 1 teaspoon Turmeric Powder (Beautiful color, flavor and good for health.)
- 1/2 teaspoon Cayenne Pepper (Adds spicy taste and good for health too.)
- 1 teaspoon Coriander Powder (Makes the dish aromatic and tasty.)
- 1 teaspoon Asafoetida (Hing) (Unique flavor and good for health.)
- 4 - 6 tablespoons Olive, Avocado or Sesame Oil (Cannot do without it.)
- 6 - 8 leaves Curry Leaves (Adds a wonderful flavor to the dish.)
Directions
Step 1 | |
Cut each Tindora lengthwise into 2 or 3 slices. | |

Place non-stick frying pan on medium heat. Add oil. | |
Step 3 | |
When oil is hot, add mustard seeds. When mustard seeds crackle rapidly, add the tindoora pieces, turmeric powder and salt. Mix well. | |
Step 4 | |
Stir fry and cook covered for about 10 to 15 minutes or until the vegetables are cooked but firm. Keep stirring the vegetables every two minutes. | |
Step 5 | |
Add cayenne pepper, coriander powder, asafoetida and curry leaves. Cook for another 2 minutes. | |

Serve hot. |
