Simple Potato Curry

This is probably only of the easiest recipes you can get. The satisfaction you get from this dish is however, inversely proportional to its ease of preparation. Everyone must make this! No doubt about it. So Easy, yet so Tasty!

Simple Potato Curry

Ingredients

  • 4 Large Russet Potatoes (washed and chopped into 1 inch pieces)
  • 2 Onion (chopped)
  • 1/8 cup Cilantro (finely chopped)
  • 4 - 6 tablespoons Oil
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Salt

Directions

Step 1
Place medium frying pan on medium heat. Add oil.
Step 2
Add onions and 1/2 teaspoon salt. Stir fry until onions are glazed.
Step 3
Add potatoes and 1/2 teaspoon salt. Stir fry and cook for 10 minutes, stirring gently every two minutes. Cook until potatoes are golden brown and cooked. Don't mash the potatoes.
Step 4
Add cayenne and cilantro. Mix well. Stir fry for a minute.
Step 5
Serve hot.
