Cauliflower Chaat Masala

Cauliflower may not be a great choice for a vegetable if you just boil it, sprinkle a little salt and eat it. On the other hand, if you cook it with some spices and other aromatic vegetables, it makes a wonderful dish. It cooks really fast too. This is really a delicious dish. You must try it.

Ingredients

  • 1 Cauliflower (broken into flowerlets (see picture))
  • 2 Bell Pepper (chopped into 1/2 inch pieces)
  • 1 - 2 Onion (finely chopped)
  • 1 teaspoon Chaat Masala Powder (see options)
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 4 tablespoons Olive Oil (you can use any cooking oil)
  • 1/4 cup Coriander Leaves (finely chopped)

Optional

  • 4 - 6 cloves Garlic (finely chopped)
  • 1 teaspoon Cayenne Pepper
  • 1 - 2 teaspoon Lemon Juice

Note

Serving Suggestions:
1) Serve with Naan, Roti, Toasted Bread, Wheat or flour Tortillas or Basmati Rice.
2) Serve Raita as a side dish.

Options:
1) If you don't have Chaat Masala Powder, you can use Indian Curry Powder.
2) If you don't have Curry Powder, you can add 1 teaspoon each of coriander powder, cumin powder, and 1/2 teaspoon of cayenne pepper.

Directions

Step 1

Add 2 tablespoons of oil to a frying pan on medium heat. Add half of the chopped bell pepper and stir fry with a flat spatula until bell pepper is cooked. Remove the mixture and place it in a small bowl.

Step 2

Add 2 tablespoons oil to the same frying pan. When oil is hot, add onions, half the chopped bell pepper, garlic and half a teaspoon salt. Stir fry for 5 minutes or until onion is cooked.

Step 3

Add cauliflower pieces, turmeric and half a teaspoon salt. Sprinkle a tablespoon of water, mix well and cook for 5 more minutes until cauliflower is cooked but firm. Do not overcook. Cauliflower cooks fast.

Step 4

Add chaat masala powder, coriander leaves and optional cayenne powder to the mix and stir fry for a couple of minutes.

Step 5

Add the fried bell pepper set aside earlier to the pan. Add lemon juice. Stir and mix well.

Step 6
Serve hot.
