Fettucine, for that matter any pasta, lends itself to myriads of interesting food recipes. This particular one has been created in the Indian style called Upma.

Ingredients

  • 2 Cup Fettuccine (broken into 3 or 4 pieces)
  • 4 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Urad dahl
  • 1 teaspoon Channa Dahl
  • 2 tablespoons Lemon Juice
  • 4-6 cups Water
  • 1-2 Green Chillies (Serrano Peppers) (finely chopped)
  • 1/4 cup Cilantro (finely chopped)
  • 1 Onion (finely chopped)
  • 1 Bell Pepper (finely chopped)

Optional

  • 1 teaspoon Asafoetida (Hing)

Note

Serving Suggestions:
1) Serve with yoghurt or cottage cheese, by themselves or mixed with fruit.
2) Serve with Indian pickles and Raita (Yoghurt typically mixed with grated or chopped cucumber and or tomatoes).

Options:
1) You don't have to break the fettuccine into smaller pieces, but blending full-length fettuccine with the fried mixture thoroughly may be a little difficult.
2) Add or reduce chillies and salt according to your taste.

Directions

Step 1
Fettuccine is usually cooked as it is according to the package directions. But in this recipe, the fettuccine sticks have to be broken into 3 or 4 parts to enhance the taste of the dish.
Step 2
Cook fettucccine according to package directions.
Step 3
Heat oil in a deep frying pan. When hot, add mustards seeds, urad dahl and channa dahl.
Step 4
When urad and channa dahl are golden brown, add chopped onion, bell pepper and 1/2 tsp salt. Stir and cook for 2 minutes, or until vegetables are cooked but firm.
Step 5
Add turmeric and hing. Stir for a minute.
Step 6
Add the drained fettuccine to the fry pan. Mix well. Add 1/2 tsp more salt and the lemon juice. Mix thoroughly.
Step 7
Serve hot.
