Eggplant Basmati

Eggplant Basmati Rice

Ingredients

  • 1 Large Eggplant (Sliced into 1/2 thick and 2 inch long pieces.)
  • 1 cup Long Grain Basmati Rice
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 2 - 4 tablespoons Olive Oil (or Avocado Oil, or any cooking oil)

Optional

  • 1/4 cup Cilantro (finely chopped)
  • 6 leaves Curry Leaves

Note

Serving Suggestions:
1) Serve with Raita (Plain Yoghurt typically mixed with tomatoes or cucumber with a little salt) and chips as side dishes
Options:
1) Increase salt or cayenne pepper as you wish.

Directions

Step 1
Cook Basmati Rice either in a Rice Cooker, Pressure Cooker or Sauce Pan.
Step 2
Place a slightly deep fry pan on medium heat. Add oil.
Step 3
Add mustard seeds. When the seeds crackle rapidly, add cumin seeds. Stir fry for 30 seconds. Reduce heat to low. Add the eggplant pieces and stir with a flat spatula.
Step 4
Add salt, turmeric, cayenne pepper and curry leaves.
Step 5
Sprinkle 1 to 2 tablespoons of water. Mix well. Cover and cook, stirring every 2 minutes. Cook for 5 minutes, or until eggplant is cooked but firm. Do not over cook, unless you like the eggplant mushy. Add cilantro and mix well but without breaking any pieces. Leave the dish partly uncovered so that the remaining steam can escape.
Step 6
Loosen up the cooked basmati rice. Add it to the eggplant mixture. Mix thoroughly.
Step 7
Serve hot.
