Masala Potatoes

Masala Potatoes: This side dish is mainly made with Potatoes. It can be used as a side dish with anything, even in a sandwich with cheese slices or by itself. However, it is mainly prepared to be used as a filling in Masala Dosas. It is delicious and a delightful variation to those who love mashed potatoes.

Ingredients

  • 4 Russet Potatoes (Peeled and chopped into one inch pieces)
  • 1 Bell Pepper (finely chopped)
  • 1 Large Onion (finely chopped)
  • 1 - 2 Green chillies (Serrano Peppers) (finely chopped)
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dahl
  • 1 teaspoon Turmeric Powder
  • 1 - 2 teaspoon Salt
  • 4 tablespoons Olive, Avocado or Sesame Oil
  • 1/4 cup Cilantro (finely chopped)

Optional

  • 4 cloves Garlic (finely chopped)
  • 1 tablespoon Clarified Butter (Ghee)
  • 4 - 8 leaves Curry Leaves
  • 1 teaspoon Asafoetida (Hing)

Note

Serving Suggestions:
1) Use as a filling or stuffing in a Masala Dosa.
2) Serve as a side dish with Poori's.
3) Use it on a toasted sandwich with cheese slices.
Options:
1) Add more salt to your taste.
2) Instead of Russet Potatoes, you can use Red or White Potatoes.
3) Potatoes do not have to be peeled, if you like it that way.

Directions

Step 1
Place a non-stick frying pan on medium heat. Add oil.
Step 2
When oil is hot, add mustard seeds and urad dahl. When mustard seeds crackle rapidly, add onions, bell pepper, green chillies, garlic, clarified butter and half a teaspoon salt.
Step 3
Keep stirring with a non-stick spatula or shallow spoon until onion is cooked.
Step 4
Add potatoes, half a teaspoon salt, hing and turmeric. Mix well.
Step 5
Add a cup of water to the potatoes. Cover and cook until the potatoes are well-cooked and almost mashable. Keep stirring the mix every two minutes on medium heat.
Step 6
When done, the mix should be thick and mushy. Should not be runny.
Step 7
Serve hot, either as a filling for Masala Dosa or a side dish for Poori's, or with just about anything.
